Gluten free chicken and chips combo

what do you need:

  • 1 bottle (12 ounces) beer or root beer, at room temperature

  • 6 pieces of chicken thighs

  • 2 potatoes

  • 2 crushed garlic cloves

  • 1/2 cup melted butter, then cool

  • 1 tablespoon brown sugar

  • 1 tablespoon of chili powder

  • 2 teaspoons salt, plus more to taste

  • lime wedges, for the wedges

  • Drizzle olive oil

Mix the beer, garlic, butter, brown sugar, chili powder, and salt together in a large resealable plastic bag. Shake well. Add drumsticks to bag, and shake to coat and control. Set aside to marinate.

Microwave the potatoes on high for 5 minutes or until they soften slightly. When ready, cut them into 1/4-inch-thick pieces lengthwise. Drizzle both sides of each potato slice with olive oil.

Place the marinated chicken and potatoes on a preheated grill. Cook drumsticks until cooked through, about 20-25 minutes, brushing with marinade occasionally. Grill the potatoes for 3 minutes per side.

When cooked through, transfer the chicken and potatoes to a serving platter. Sprinkle with salt and serve with lemon wedges.
